We got 8 pounds of beets in our produce box this week.
EIGHT POUNDS.
Give me escargot {yes snails}, hand me Brussel sprouts and mushrooms galore, and gimme that cilantro so many hate. But don’t feed me beets. There are a lot of things I wouldn’t eat growing up. I was pretty picky. Chris however, grew up with an eclectic assortment of really healthy foods. Now I would say we’re on a pretty even playing field. Except I still really don’t like Beets.
Chris begged me to stop saying they looked like blood and my friend Naomi giggled that I said they taste like dirt. And here I was, stuck with enormous roots of yuck.
Ok, ok, I’ll stop.
I did find a few ways that I liked to eat beets. More importantly, I found ways the kids enjoyed them so I can eat things I like better.
6 ways to eat beets that you just can’t beat
Let’s start with how to soften them.
I am a huge fan of using a pressure cooker when possible. It’s so fast and instant pots are so safe that they just can’t be beat. I started off at 15 minutes, but realized they realistically are perfect at 21 minutes manual pressure.
You can also roast them at 400 for something like 45 minutes to get them to a point of peeling the skin off.
Cook the greens.
I cut them all off and placed them on parchment paper at 400℉ for 18 minutes. I do the same with kale chips so I thought this would be a good idea. I was right, and surprisingly enough the greens are tasty and taste nothing like the root.
Beet Brownies
Oh heavenly and divine chocolate is a great way to cover the dirt taste. I didn’t feel so guilty eating two squares and it was actually really easy. I also had a lot less guilt feeding my kids sugar knowing there was more beetroot puree in it than granulated sugar.
They’re basically red velvet brownies!
Beet Hummus
A friend suggested this! I thought it was a really great idea because my children are all about dips and condiments. Even better is that the girls would get a super bright pink variety to dip their veggies in.
Borscht: Polish Beet Soup
While not my personal favorite, a good beet soup with hearty potatoes is a good way to use up some extra veggies. My husband loves it and the kids are really starting to like the taste of beets too!

Hidden Beat Smoothies
I used to make heart crusher smoothies for my girls when they were little and it was a way I tried to stomach and choke down beetroot. Maybe that’s why they like beets now, but either way, this is a great recipe.
Sweets and Beets
We love sweet potatoes in our family and even better is when they’re grilled or roasted. Several friends mentioned they like “sweets ‘n’ beets” so of course this was added to our list of how to use up 8 pounds of beets.
